As every poor Jewish woman must be moaning, this weekend is the triple whammy of Jewish entertaining, not just Friday night Shabbat dinner but 2 Seders Saturday & Sunday, if you are Conservative/Orthodox. Thankfully, the seder situations are planned and partially completed as I stood on my feet all day Sunday and cooked, baked and froze. As my mother will be in town this weekend, I am also hosting Shabbat dinner and am looking for some inspiration for a quick & easy meal I can prepare Wednesday that can either be reheated or cooked Friday (the cleaner is coming Thursday afternoon). We are having roast beef Sat for Seder #1 and either capon/turkey Sun for Seder #2.
Don't want to serve the usual gefilte fish/roast chicken/kugel/veg/ as we will be having HUGE meals Sat & Sun. Any suggestions for light, easy to make 3 course meal would really be appreciated, need some inspiration! Thanks in advance!
