Draeger's Cooking School

I'm looking for some help on deciding how to spend a gift certificate for Draeger's cooking school. I've got enough for one class plus change, or I'm willing to spend some of my own money for two classes if they're really good. I'd prefer it be a hands-on class, and the Asian ones sound most interesting, but I could be talked into something else. There's a wine class that also looks interesting.

I've previously taken Pizza Tossing World Champion Tony Gimegnani's pizza class and a Northern Italian wine class, both of which I thoroughly enjoyed.

Any experience with classes taken by the following chefs, or others from their Spring catalog?
