After hearing Robb Walsh repeatedly sing the praises of Doziers, a friend of mine and I took a little trip out to Fulshear to try it out for ourselves. We were very impressed with the pork ribs and the sausage, but found the brisket dry and unappealing. I also bought some pecan smoked bacon from the meat market, but I havent cooked it up yet. Its supposedly very good. The atmosphere is just what you would expect
By the way, I recently purchased Walshs Legends of Texas Barbecue Cookbook and have enjoyed reading it. I havent used any of the recipes or cooking techniques from the book yet, but the history and information on the different regional barbecue styles within Texas has been fascinating. I would recommend it for anyone who is truly obsessed with barbecue, as I am.
