ok, so i don't NEED to, but my pregnant belly is demanding that i make some tasty doughnuts. one big concern i have is that in my household, there are only 2.2 people to feed (and currently only 2 actual mouths with which to ingest doughnuts), so my first question is around storing doughnuts, either fully-cooked or in dough form - what is the best option? i could halve recipes, but i feel like if i'm going to go through the effort, i might as well make a full batch. do they freeze well?
the 2nd question i have is actually a request for good doughnut recipes. these seem harder to come by than i thought. i really like yeast doughnuts, but i also really like cake doughnuts as long as they're light (like federal donuts' "hot fresh" doughnuts in philly but not their special ones, if anyone's been). i do NOT like typical cake doughnuts/dense doughnuts or ones that are too complicated… just rolled in a simple spice/sugar blend or topped with a very light glaze.
with that said, i've found alton brown's yeast doughnut recipe and might give that a try this weekend. but wanted to see if any of you hounds have go-to recipes for doughnuts - thanks!
