Decadent deli sandwich

I'm on mission to figure out which New York deli can do the best job of making a sandwich I used to have just the way I liked it at my hometown deli back in -- believe it or not -- New Hampshire. A friend introduced me to it as something called a "sailor", which is what the deli in HIS hometown of Richmond, Va., called it on their menu.

It's an amazingly decadent thing, and if done right all the fats just melt in your mouth: split grilled knockwurst with pastrami and swiss on grilled rye, with brown mustard. Simple but good!
