DC chowhound seeks taste of Texas

I'll be at Dallas Fairmont for 3 days with DH on business trip. During the day I'll be on foot hounding local chow. Any recs for good cheap eats, local must-tries, ethnic holes-in-wall, takeout counters, interesting chow shops etc within (long ok) walking distance or easy public transport would be much appreciated. Want to try Texas chili, shrimp roll, BBQ, red grapefruit and anything a Texas hound takes for granted but loves. Evenings with DH looks like a)Pyramid Grill (arriving p.m. at hotel)any menu recs? b) Bob's for steak (DH is major carnivore)and c) need suggestions for good authentic mexican, tex-mex or other regional restaurant, taxi distance ok. Thanks in advance Dallas hounds.
