I made Epicurious' bacon wrapped dates last night and definitely see the potential; however, the dates were too overwhelming. I think part of the problem was that they cooled too much before eating. I put them in the oven a few minutes before my guests arrived, but they ended up arriving later than planned so I took them out of the oven to prevent burning. I should have waited to put them in the oven after they arrived. I am also thinking my dates were too big. I bought some amazing medjool dates from a mediterrenean market; they were plumper than any other dates I've eaten. The date part was my only issue, I was really happy with the rest of the ingredients. I filled them with almonds and dry Sonoma Jack cheese, which I thought was perfect. The cheese was very nutty tasting and gooey but not too oozy. If anyone else has opinions on what might have gone wrong please let me know. Also, I'd like to make a vegetarian version. Is there a peppery green that will hold up to baking?
