well, tax season has sapped most of my spare time, so I decided to try cooking my corned beef in the crock pot this year, with some great success I think.
the night before, I hacked up some yukon gold potatoes, carrots, onions.
the next morning before work, I dumped half of my veggies in the crock pot, threw in some peppercorns, a couple of smashed garlic cloves and a bay leaf or two. placed the corned beef on top. (fat side up.. any comments on which way is best? I debated about this for probably too long yesterday morning). dumped the rest of the veg on top. poured over 1 bass ale, 1 can chicken broth, water to cover. put on 10 hour time. when I got home the house smelled wonderful.
pulled out meat, tucked in head of cabbage, cut in 1/8ths. let stew for 20 mins or so..an voila! dinner is served.
I loved how tender the corned beef turned out. so tasty. (it was a good cut of meat, not that gacky stuff in the bag). but really haven't ever had one turn out so tender. my only draw back is the other veggies were too soft, I think I'd add them 1/2 through the cooking process instead of at the beginning. they were still tasty, but the potatoes crumbled. but that was nothing a couple pints of guiness couldn't help. :)
I loved coming home to dinner already cooked. I might have to investigate using my crockpot further.
