Critique My Dining Itinerary Feb 24-27

Headed to New Orleans next Tuesday - Friday for a brief vacation with a friend. I've put together a dining itinerary and just wondering if there is anything I should definitely omit or add. I lived in New Orleans for a year before Katrina so very familiar with the city. We're both very adventurous eaters. Also, on a bit of a budget. We don't mind spending a little but not trying to break the bank. Let me know what you think:

Tues: Dinner: Cochon Butcher
Wed: Lunch: Cassamento's; Dinner: Parkway Bakery
Thurs: Brunch: Atchafalaya; Dinner: Boucherie
Fri: Lunch: Herbsaint

I'm pretty secure in all of my choices except Herbsaint. Not sure the lunch menu looks as exciting as dinner (which is a little out of our price range this time around) but I've always loved their gumbo and the spaghetti with the fried egg on top. We'll be staying in the CBD so need a place fairly close so we can make our return flight home. Let me know if you have any other suggestions or if Herbsaint is still a solid choice for lunch.

Also, what time should we arrive at Casamento's for lunch in order to not have to wait? Would you recommend arriving and lining up before opening time?

And lastly, reading a lot about MoPho . . . would you recommend it over any of my other picks? We just couldn't go there on Fri because it's a little out of the way.
