I'm looking for a relatively easy oven-baked chicken cutlet recipe. This weekend, I tried one from Epicurious which involved rolling two flattened chicken breasts in butter then herb-flavored breadcrumbs and baking at 450 degrees, but I was underwhelmed. It was edible, but barely crispy.
Can anyone suggest a recipe which has a bit more "oomph"? I know pan frying it would likely be the best solution, but I like the idea of just popping something in the oven and not thinking about it (especially in the summer).
