Creole/Cajun food for displaced New Orleanian

I've been on a quest for some of the food I've grown up with. Overstuffed Poboys, gumbo, jambalaya, red beans and rice, etc. Everything I've tried had been miserable- six little shrimp sitting alone on dry bread passing as a poboy, floury chicken broth with rice and sausage posing as gumbo. Please, help me think of home!
