Cream Puffs - with no "puff!"

I've made cream puffs several times before...and they came out beautifully.

I've tried to make them again recently. They've baked up great, but when I take them out of the oven and let them cool - they flatten!

I have many to make, so turning the oven off and leaving them in their to gradually cool isn't an option.

Any suggestions would be greatly appreciated.
