I have a question about how long to cook corned beef. I think we might be mangling this humble cut of meat.

Background: my Mom's recipe --her Dad was from County Cork-- says to simmer a 3# piece for about 3 hrs. on the stove. I've made it that way but in recent years have been using a crockpot. Most crockpot recipes say cook it on low for 7-9 hrs. The packaging say to cook it to 160°. Last year I checked the meat temp when it was done (8 hrs). It was around 200°! So, this year I checked after 6 hrs and it was about 180°. Both times the meat was fine/tasty. But, next year I'm going to cook it for a shorter time.

My question: does it matter how long it cooks for as long as it reaches 160°? I think it should be safe from an eating perspective. But, maybe these recipes say cook it for a long time to tenderize the meat. Or, maybe we're all just cooking this poor piece of meat to shreds. Thoughts?
