Since the other post has over 300 comments, I thought it would be best to continue on a new one.

Tonight I purchased from my local Marshalls a Silga Teknika 20 cm saucier with lid for $50. They had 3 other pieces there from this line. A 28 cm rounded bottom kind of stew pot with flat lid, a 24 cm saucier, and some kind of 2 small handled saucepan, it was on the back of a bottom shelf so I didn't fish it out. The bottom measures 1/2 of a centimeter, so I don't know if anyone has offhand how much aluminum is in its base. The lid is heavy, the pot seems kind of heavy, it says "100% Made in Italy".

Anyway, I told the cashier that I will be taking the stickers off to test this pan on induction so there is a chance I will be bringing it back and that I have found all this cookware I invested in is not performing well on induction.

Tonight I did a boil test and cool down between this pan and the Demeyere Atlantis saucier 22 cm with two cups each of very cold tap water. Here are the results of that:

Teknika
Boil: 02:30:18
Shut down to no bubbles: 00:00:12:22

Atlantis
Boil: 02:39:42
Shut down to no bubbles: 00:00:10:47

Then I did the scorch test, the old one I used previously where I started low and waited a few minutes then kept bumping up the level until it would scorch enough. Since this was aluminum, I wait 5 minutes in between. Here are the pictures.

I am not going to bother preheating the Atlantis 24 cm saute pan and doing Kaleo's second test. I don't think that is going to tell us anything, or give us any new answers. This is a pan that needs direct heat under it, I'm sure, and the copper heats well fast enough that it "should" be even if it were to be on a right size burner. It is not even on a burner smaller than its disc. I am hoping to be going to that appliance store tomorrow to try the two saute pans, if those two work with their sizes, then I'm sure the 3 qt Atlantis saucepan will work better as well. I doubt even the Fissler would be able to spread the heat out from the burner in the middle, but it might try better than the Atlantis.

In fact, I called Ambiano/Aldi today to inquire that this PIC is sized for up to 10.2" pans, and the outer ring is 9.5" and the inner ring is 7" and between the two rings, the unit isn't working and if it's supposed to be, it is not appropriate for any base larger than 7". They are going to be getting back to me.

As far as the results between the Teknika and the Atlantis sauciers, I think the response times are pretty close, I don't know why the Atlantis was faster on the cool down but these are the numbers today. And as you can see, the Teknika is completely even on its base.

Also, one nice thing I noticed about the Silga Teknika is that there are also no rivets, this saucier's attachments are all welded. I couldn't take the lid off because it's tied from the store, but I noticed the lid props nicely on it. I tried that with the big stew or braiser pan at the store and it started to tip. I have a half a mind of going back to get that big braiser or whatever it is, it is priced $70, but I don't know where I would store it or what I would do with it that I wouldn't be doing in other pans. I kind of wanted the Lagofusion Accedemia for a stew pan eventually unless an Amazon deal comes up that I would need to take advantage. Also, the stick handle on this saucier is one of those tube handles, not my favorite to say the least but I guess it isn't uncomfortable like All Clad's tri-ply. Still can't believe ATK tried to justify those.

Anyway, I am still waiting on the two Fisslers, they should be coming tomorrow, they are in Ohio. The Anolon copper nouvelle SS saucier is coming on Monday.
