Cooking a whole hip of beef

Hello! I have a business in which I roast whole pigs all summer,it's great. My neighbour has asked me to do a hip of beef in addition to a pig for his daughters wedding.I have two large charcoal bbq's so that's not the issue.I have never done anything other than a pig and the hip of beef will probably be big enough to feed 100-150 people.What temp am I aiming for,should I be injecting it? My fear is that it's either going to be dried out or totally raw inside.Any help or advice is greatly appreciated,thanks!
