Cooking candy-striped beets

I bought some candy-striped beets to make for Thanksgiving. I would like to know what would be the best way to cook them so that the stripes don't bleed. Unfortunately the farmer I bought them from already cut off the stems and tails, which will make it more difficult I imagine. I thought of making Harvard beets so that the glaze will make the stripes even more striking. Any thoughts? Thanks!
