Anyone cooking with amaranth?

Not the leaves of the plant but the grain-like seeds. I've only ever seen them sold in the loose bins at Whole Foods. The only thing I know what to do with them is boil them in water/stock and flavor with salt, pepper, butter, cheese - similar to what you would do with rice or polenta. Basically an alternative to rice as a starchy side. Anyone doing anything different or exciting?
