Our town's paper published a good cookie baking section today. One of the articles is a compilation of tips "for baking awesome cookies."
Patrick Judd owns a bakery and restaurant in suburban St. Louis. Baking is a big part of his business. Several of his tips cover issues that I think I have seen in more than one thread in this forum. So I thought I'd link to the article, which isn't long, in case someone wants to improve their cookie baking game. For instance, he mentions why a recipe would include butter and shortening.
