i bought guinea fowl and tried to cook it just like a chicken in a braise Italian style - by a Mario Batali recipe.
It was undercooked and raw in the center.
In cooking this bird, how is it different from a chicken?
And does it taste different from a chicken?
I only tried to cook it once and failed but wish I knew more.
