Cook Friends/Family Who Keep Secrets

I just posted a recipe-specific thread on Home Cooking, but I thought I'd also post here about close friends and family who make certain dishes really well, but who won't share the secrets to their success.

In my case I have one good friend and one cousin who both are good cooks, and each makes one astoundingly good dish. The friend's is ratatouille, and the cousin's is cioppino.

Neither person flat-out refuses. But they are both masters of avoiding, dissembling, delaying, changing the subject, etc., etc., so that no real information passes. Even asking to *watch* them cooking--in response to the "I don't really have a recipe" excuse--never gets anywhere.

Anyone else get this runaround? I mean, it's not that I'd bring or serve *their* prep in their presence, and in fact I'd LOVE to give them full credit to others.

These are otherwise nice people with whom I get along great. But I'm starting to think of this behavior as selfish.
