What to cook with a bounty of Asian herbs

I got a great variety of Asian herbs to plant a few weeks ago that I bought on a whim, but now that they're growing like crazy I've realized that the few dishes I had in mind are not going to be enough!

I'm growing: Thai basil, rau ram (Vietnamese coriander), lemon basil, lemongrass (but really tiny and about the width of spaghetti, mint.

Asian herbs that I have easy access to: betel leaves, curry leaves, lime leaves (frozen), lemon leaves, sesame leaves/shiso, culantro/ngo gai, ngo om.

If anyone have suggestions of dishes to help me use them up it would really be appreciated.
