I'm getting to that stage in my Real Life® where many of the comfort foods I once consumed with gusto and in great quantities can no longer be considered "comfort" or "food."
I made the daughter-units a round of Nachos "Supreme" last night, though, that just rocked Castle Ranger and brought all three back for seconds. Preparation is easy and can be done in five minutes.
Ranger's Nachos "Supreme"
2 - 14 oz bags La Tapatia California Style Tortilla Chips*
1 - 14.5 oz can/box Stagg's Country Chili with beans
1 - block Tillamook Extra Sharp Cheddar, grated
1 - wheel Mexican cheese
2 - 8 oz containers creme fraische**
7 Jalapenos, sliced
1 bunch scallions
Preheat oven to 400°F.
On a oven-proof platter, arrange ingredients in a layered effect; chips, chili, cheeses, scallions, and jalapenos.
Set into oven for five minutes (keep a close watch on edges so that chips won't get burned.) Remove and top with a dollp of creme fraische. Serve hot. If you do not move your hand away quickly enough, count your fingers...
* Substitute your favorite bag of tortilla chips or make your own.
** Sour cream can easily be substituted but all three daughter-units can pick that flavor out no matter how I've disguised it.
