Why are there no city caliber restaurants in Metro-West

I don't understand why the Natick-Framingham area doesn't have a great restaurant. The South shore has Coriander in Sharon, Tosca in Hingham and a few others. The Western burbs have Le soir, Lumiere, Il Capriccio,Blue Ginger etc. It seems to me that there is a significant population of young professionals that would embrace a real restaurant. Don't these people get tired of The Olive Garden, Friday's, Chili's etc. No offense but Metro West is long overdue.
