First, I suppose, have any of you had these cookies? Last time I was at City Bakery, maybe mid-July, I was told they weren't making them anymore. Sad! They're small cookies, maybe the size of a silver dollar and about an inch thick. The best texture I can come up with is shortbread, albeit a dense one. Maybe just a denser shortbread recipe with cocoa powder added? I'd guess they're made into a long, which is rolled in a mixture of pretty small pieces of cocoa nibs and big crystals of sugar (like closer to big sugar-in-the-raw crystals). They're great because, despite a bit of sugar on the outside, they're not at all overly sweet but are quite chocolatey!
Anyone ever made these or know how to make them? I just saw cocoa nibs for sale at our local Whole Foods, in the bulk section (although pre-packaged by the store) and would love to use them to the purpose of these cookies!
