Which one to chose?

Hey guys, heading to LA May 16-21 but I am getting overwhelmed with where to eat? Want some good food, atmosphere and mix it up between nice/expensive and reasonable/fun places. Love good food and nice wine but also love a good pub lunch and a beer. we're happy trying all kinds of food. Can you have a look?

Fri night - Il Sole or Katsu-ya? I have heard that if you're not famous or rich you get put in the back wine room at Il Sole and it isn't pleasant?
Sat/Sun/Mon night - no idea yet but staying in WeHo and have a car
Sun lunch in Santa Monica - Father's Office or Joes? Both sound really good. Maybe Musha for Japanese?
Breakfasts - heard that the Griddle, Madame Matisse and Farmer's Daughter are all good?

Places that sound good for dinner - Cut, Dan Tanas, STK, Mr Chow, Nook or are these all just expensive celebrity spots?
Would like more suggestions for dinner as we will probably have lunch on the go or chose a place on the day.

Also - is it too late to get reservations at most of these places seeing as I'll be there in May (less than 3 weeks)?

Any suggestions would be cool.
