Having attempted to nudge myself out of my cooking comfort zone, I bought a can of chipotles in adobo sauce for a recipe. Now I've got the rest (5 or 6 peppers and the sauce) leftover.
What can I do with them? I've also got flour tortillas left over and am thinking about quesadillas for a quick dinner tonight... would that work somehow?
If you couldn't guess, Mexican and Tex-Mex food is not at all my normal kind of home cooking. I'd appreciate help using those chipotles either in the quesadillas or in something else.
