Went to Emperor Noodle, tried the XLB (nice and soupy, and aside from the nipple on top, fairly thin skinned and only prone to break if you tried to lift them - i scooped mine with a spoon and ate it wonton style) , SJB (yeah, they're weapons grade, but a little too doughy for my tastes) which were a lot better than the noodles.
Was pleasantly surprised by the double mushroom/gluten dish. What looked like a mushroom in the pic in the menu turned out to be an inflated gluten ball that had a surprisingly fluffy texture.
Seems to me that there are a lot of SGV chinese restaurants that are like that - what you should order there is NOT what you'd think based on the restaurant name.
Examples I can think of offhand would include lucky noodle king and their beef roll. Are there other obvious choices?
