Chinese food for Mother's Day, with some parameters

Looking to take my mom out for Mother's Day. She'd like to do Chinese, but doesn't want to go to a place that's too divey or rushed, so dim sum and spots like NY Noodletown are probably out.

She also wants to try a place we haven't been to before. Here are the places in Manhattan we've been to already: Grand Sichuan International (Chinatown and West Side), Joe's Ginger (Chinatown), Our Place Shanghai Garden (Midtown), Shun Lee Palace (Midtown), Shun Lee West (Lincoln Center), Ping's Seafood (Chinatown), Mandarin Court (Chinatown).

Any other restaurants that fit this category? Cantonese, Szechuan, it doesn't matter, as long as there are plenty of seafood and vegetarian options.
