Chinese cooking

I'm interested in learning how to cook authentic Chinese cuisine and to that end I recently purchased the book The Art of Chinese Cuisine. Quite a few of the recipes call for the use of MSG. Is this necessary? And if so, is there a good substitute? Also, if possible, is there any way to remove rust from a wok?
