Chicken Soup - 2 Birds 1 Stone

My husband got the flu last week so I made a chicken soup.
Instead of putting all the chicken in the pot and adding the cold water I left out the breast. I usually start with a whole cut up chicken and a package of either wings, necks and back or feet when they're available. I brought the water to a boil, skimmed,added the salt, onions, etc. ,and then added the breast and let it simmer for about 25 minutes and took it out. This way the breast is perfectly cooked and ready to be a sandwich, chicken salad, or whatever. This is the answer to what to do with the chicken soup chicken. It changed my life and I hope it changes yours.
