Chicken in Parchment Paper?

I just made flounder in parchment with truffle oil and leeks. It was fantastic. Now I'm wondering if anyone does thinly pounded chicken breasts in parchment paper. If so, could you share the flavor combination you like and how long you typically are cooking them. Are you using a thermometer just to make sure they are cooked through? Thank you!
