Chiang Mai Night Itinerary Mon-Wed

Hi all, I'm pretty overwhelmed while researching Chiang Mai. The information is all over the place and nothing sticks in my head so I have pages and pages of notes and still no definite plan. Maybe I am overthinking it. HELP PLEASE!

It's my honeymoon and I'm obsessed with food. I spent so much time and effort researching what to see/do/eat in BKK that now my brain is mush.

We'll be there a Monday night, Tuesday night, and Wednesday night. We won't have a ton of time in the day times because we arrive midday monday and we have activities planned Tues & wed.

My husband is a pescetarian (because of allergies) and also allergic to peanuts and egg yolks.

I love Khao Soi (even though i've never had it Thailand, I've never BEEN to asia, I love the versions tasted in the US), but it does seem all the Khao Soi places are only open in the day. Also the meat factor. So I'm stuck on how to try it at night and with DH.

Also, which night markets to go to? Is Warorot good for eating at night?

Is the "Night Bazaar" good for eating at night?

We're staying near the Night Bazaar just east of the river. (Or body of water I am assuming is a river).

I've been clicking on blog after blog and post after post but I'm getting more confused.

I THINK I want to try to get to Sorn Chan one night, "Chiang Mai Gate" stalls one night, Huen Penh

I would hope to get to either Khao Soi Samoe Jai before 5 pm,
Khao Soi Prince or Khao Soi Khun Yai before 2.

What am I missing (especially night street food area with plenty of good options for allergic DH) on a Mon-Wed evening?
