There is an article in the new (March 2005) issue of Saveur on the small dishes (xiaochi) of Chengdu, with special mention of Long Chaoshou, a phenomenal place in the center of town that serves outstanding dumplings, noodles, and other small dishes. The Saveur magazine includes recipes for Long Chaoshou (Dragon Wontons), Zhong Shuijiao (Boiled Dumplings), Dan Dian noodles, Dou Hua (flower bean curd), steamed beef with rice meal (fen zheng niu rou), and sweet potato cakes (hong shao bing).
If any of you is going to go to Chengdu, you absolutely, positively, must go to this restaurant, but prepare yourself in advance, since no one there speaks English and the menus are all in Chinese only. Bringing the article with you might be a good way to get by.
The restaurant is at 8 Chunxi Lu, is open all day from breakfast on, and is extremely inexpensive. GO!!
