Cheese Beignet Fail

I made this recipe tonight but when the batter hit the hot oil they fell apart. It’s a pate a choux dough with cheese added. I was dubious from the start because two cups of cheese seemed like an awful lot. I put the dough back on the stand mixer and added more flour but that only slightly improved the finished product. I used half blue cheese and half cheddar. Do you think it was the amount of cheese that caused the failure?
