Cheap/Moderate Maui Recs?

I've read all the very helpful posts below about Maui, and wondered if there were places I should visit (or avoid) next month that I should be aware of.

My SO and I live in Los Angeles, so we are very spoiled when it comes to fantastic chow-ish places for fish tacos, sushi, and Korean BBQ (so I might have an Angeleno bias to my questions, but I am just looking for some context--but all opinions are appreciated!)

Here are places I'm interested in...comments/additions?
Gazebo for breakfast
Saturday morning swap meet
Honokawai Okazuya
Sansei for non-sushi (this sounds a bit like Katsu-Ya in Studio City--is that right? Is it worth visiting if we often eat at Katsu-Ya?)
Azeka's --again, is this worth a trip if we often eat good Korean food?
Komada Store & Bakery for donuts
Paia Fish Market

I'm honestly not very interested in high-end places, except Haliimaile General Store (sp?). We are also going to the Old Lahaina Luau.

Things we ARE interested in: Plate lunches, shave ice, malasadas, hamburgers, breakfasts, "only on Maui" food experiences. For context, when we visited Oahu, my SO's favorite food experience was the shrimp stand on the North Shore (not the famous graffiiti truck--it was another place in front of a shrimp pond), and I loved Matsumoto shave ice.

We are taying in the Hyatt at Kaanapali, but will certainly drive to Hana one day, Kihei at least one other day, and anywhere else needed. Mahalo!
