I am tempted to make ceviche at home, using shrimp and scallops; however, for some reason, even though I often order ceviche at restaurants, I am a bit scared to make it at home. Let's just call it a fear of parasites.

However, it is time to get over my fear. Does anyone have any tips or a good recipe?
