Woo hoo… we're back in one piece, more or less! Last night I was pretty distressed with all the happenings and it must have instilled a creative urge in me! I don't usually make up very many recipes because I'm not super confident with my cooking skills- I'm a good recipe follower, but that's about it! I got it into my head yesterday that I wanted to recreate a childhood favorite, Campbell's Bean with Bacon Soup, only better! I also didn't want to go to the store and just used what I had on hand. And… it was the best soup I've ever made! Hope you try it and like it as much as we did!
Bean with Bacon Soup
1/4 lb. bacon, diced
1- 2 T. butter
1/2 small red onion, small diced
1/2 small red pepper, small diced
1 large carrot, small diced
3 small cloves garlic, minced
2 T. fresh thyme
1/4 cup dry white wine
2 T. flour
2 cups chicken stock (we used homemade)
1 can white beans (I had Great Northerns)
Salt and pepper
Fry up the bacon until crispy, drain the bacon and set aside, reserving the bacon fat in the pan (I probably had about 2 T). Add butter to pan and sauté red onion, red pepper, and carrot until they just start to caramelize; add garlic and cook for a couple of minutes. Season with salt and pepper and add thyme; cook for 1 min. Add wine and cook until evaporated. Add flour and cook two min. Add chicken stock and let simmer for a couple of minutes. Add white beans and bacon, and heat until warmed through. Serve with parmesan cheese on top. Extra good with garlic bread!
