Finally got to Carl's and had one with onions and provolone. In my five years in Philly, I ate many cheese steaks. This one certainly can claim to be an authentic-type cheese steak in terms of the character of the ingrediants, but doesn't fall into the category of great cheese steaks, IMO. I thought the meat was a little dry, there weren't enough onions and the roll was a little too chewy. Much better than anything I've had in NYC, but I'm not making any plans to go back soon.
