Actually, Sfoglia on Nantucket makes the best carbonara I have ever had. Better, in fact, than many I've had in Italy. It's perfection resided in the way that the noodles were just lightly coated by the sauce, keeping it from seeming heavy, yet each bite still transported an intense punch of peppery, bacony, rich flavor. It was the only carbonara I have ever had that could be described as both ethereal and earthy.
