Using carbon steel on electric glass top

ILuvGrub | Feb 13, 202004:00 PM     6

Right now there is a set of 3 Mauviel carbon steel skillets on sale (til the 17th). When I look at them and ponder the possibilities, I get this warm, fuzzy feeling which can only be described as bliss. Problem is (or is it?), I have an electric glass top stove.

I've done whatever research I can on the internet and I get varying opinions on whether carbon steel performs well on a glass top (not induction). Some have said it's perfect. Others claim it's prone to warping so it won't sit flat. I use plenty of cast iron and it works excellently, but it's much heavier that carbon steel.

I figured I'd post here and see what the community has to say. Hopefully someone even has some direct experience with this. I suppose I will also reach out to Mauviel and see what they have to say. Unfortunately, on their website, it doesn't really mention which cooktops are NOT ideal for this type of pan. By the time I hear back from them via email, the sale will likely be over.

Thanks!
