Hey CarbLover,

Thanks for those mouth-watering photos you always post on CH. I finally checked out the Zuni Cafe cookbook from my library and tested the famous Zuni chicken and bread salad recipe....it was too deliciooooous :)
I took your suggestions and followed the recipe strictly (except I didn't have the dried currants and sub-ed with dried cranberries). It was awesome! Skin was so crispy and meat was sooooooo juicy and infused with the rosemary sprig I stuffed under the skin 2 days before I cooked the chicken.
You're right on, the cookbook is difficult to follow when you're trying to cook and read through the lines but I like her style in giving exact measurements, time, temperature and specific instructions. I find too many cookbooks written by star chefs lacking in that aspect. Often the image provided in the cookbook shows ingredients/garnishes that could not be found anywhere in the recipes!
Also, I have to thank you for posting the photos of your delectable creations! They really often inspire me to actually checkout the cookbooks or test those recipes. I find it a lot more encouraging when Chowhounders, not star chefs with fancy restaurant equipment, tested a recipe with success. I also like to see photos to have an idea what the final product looks like and most cookbooks lack those too!!!

Now I gotta go to Zuni to test out their version of the chicken!
