I feel a bit bad ever since the number one roast chicken recipe tester, Carb Lover, listened to my urging and tried beer bottom chicken - and was disappointed.
I know this doesn't really fit in with your ideal 'simple' roast chicken, Carb Lover, but it makes a nice change, and the gravy and stuffing are simply heavenly.
Firstly, it takes my favourite trick with chicken breasts - marinating in buttermilk - and applies it to a whole chicken. Why didn't I think of this???
Secondly, it involves an Israeli couscous stuffing. Yay.
Thirdly, the skin turned out very dark (from the glaze) but also very crispy.
So I reccommend the recipe!
