hi, all -- I am new to canning. I've made one batch using fruit already (boiling water canning) and would like to do more. My next attempt will be a pickling recipe. My canning book (Ball) says to never substitute when using their recipes.
This is my question -- the recipe I want to make (it's called jardiniere pickles) calls for green peppers. We don't like green peppers. Can I use red peppers instead?
I'm worried since they say not to substitute in the general instructions. I would, of course, use the same amount (1 lb is called for) required by the recipe.
What do you think? Thanks for any help/advice.
