Camping Areas North of NYC this Summer?

Does anyone have any suggestions for good camping spots? They can be anywhere within 3-4 hours NORTH of NYC / Westchester County.

I plan on going camping most weekends of this summer. I have off from school Friday morning until Monday Afternoons so I don't mind a bit of a drive.

I like uncrowded, easy availability, fireplaces, and good scenery with mellow hikes. I don't want to hike in to the site but canoeing in is ok. (After 10+ years as a professional wilderness guide I like my luxury when camping)

Also any suggestions of Chowish spots to eat or shop in the camping areas? Local farm markets, stores, and restaurants?
