Using cake flour instead of all purpose flour

Other than doughy bready recipes, do you think using cake flour will have better result than using all purpose flour in general?
I love fluffy, moist, airy and soft things so If I substitute cake flour to make pancakes and other cakes and cupcakes, will it have softer texture or is this a no no?\
Also if I use caster sugar instead of granulated sugar, will it help the cake to be more fluffy and airy?
