Yesterday was my annual day of baking madness with a bunch of friends at my house. This year we had 11 people making 17 cakes over the course of 10 hours. For some reason, the selections this year were heavy on the cream-based cakes. It's funny how things go in waves.
My first cake used Stella Parks' white mountain cake as its base. It's a really nice white cake that uses a combination of coconut oil and butter, plus buttermilk and egg whites only. I filled it with layers of strawberry jam and pastry cream. I frosted it with a whipped strawberry ganache made with Valrhona's new strawberry feves (which are crazy delicious). Despite its appearance, the frosting is not sweet, as there is no added sugar beyond what is in the feves themselves.

My second cake was Stella Parks' skillet devil's food cake with a whipped milk chocolate and caramel ganache. The ganache was made with Valrhona's Caramelia, which is amazing stuff. I've made this one before, so knew that I would be happy with it.
The first two pics are of all the cakes and the slices. Then my two cakes, and then a shot of all the slices, ready for tasting at the end of the day.
