Still brainstorming about my non-dairy cake! This is my latest thought: Do a jellyroll (sponge cake with chocolate chips in batter), fill with choc icing (margarine based) and frost with 7 min frosting. It's for 2 four year old boys hence the lack of exotic flavorings. Not having made a jelly roll befoe (nor a sponge cake), I am wondering if a) this will work and b) if you can recommend a specific sponge cake recipe. Thanks for the help. I really only have 3 cookbooks worth referencing for cakes - America's Test Kitchen, Gourmet and Buttercup Bake Shop - plus an online subscription to cooksillustrated.com - so I may not have the cookbook you suggest.
