Yeah - best thing I've had in a while is an occasional special at Juquila: heuvos con nopales. Cactus with eggs. I've had cactus before sometimes, but it is easily greasy. Gross. This cactus is - gentle, succulent, not greasy, mixed in dry scrambled egg. It's a little like eggplant, with a very different flavor that I am completely unable to describe. I have never had anything quite like soft, juicy cactus amidst scrambled eggs. It is entirely addictive. Make yer own taco, add a little lime and salt and tapatio.
