What should I look for when it comes to buying a commercial grade vegetable dicer?

Hey everyone. Not necessarily looking for a product per se but if you have one all I'm all ears. Anyway, I'm basically in the market for a vegetable dicer but on a commercial grade level. I started out with one of the cheap $19 OXO ones but ended up cracking the plastic twice. Now I'm looking for something sturdy, will last long, and requires minimal force when dicing for instance, half of a large yellow onion.

I took the liberty of visiting the webstaurantstore and while they offer a wide variety of dicers I'm having a hard time deciphering the difference between a $90 model vs. a $300 model. The product descriptions are pretty basic and almost say the same thing. I was able to contact customer service but being that they really don't do sales, the most they could tell me was that products were graded on a scale of: Good, Better, and Best. I'd just like to know, "why".

I've heard, Vollrath carried great products in general and they happened to have a dicer that caught my eye: 15000 Redco InstaCut 3.5 1/4" Fruit and Vegetable Dicer. Not necessarily looking to break the bank with a $300-$400 model but at the same time I have no problem paying for quality. Any suggestions?
