Brioche by hand?

I am looking for a brioche recipe that I can use to make cinnamon rolls or sticky buns. I have Baking with Julia but the book mentions that you need a heavy duty mixer, which I do not own. Do you really need a mixer to make brioche?

I would also welcome any tried and true cinnamon roll recipes. I had one of the best and one of the worst rolls last week. The best one was at the 'craft kiosk in Bryant Park. The dough was soft and flaky/doughy. The worst one was at Corrado bakery in Grand Central. It was hard as a rock - there was no pulling it apart. I got it in the morning so I really don't understand why it was so bad.
